Well they are actors and they are fighting with wooden sticks..
The only hollywood prod. with actors fighting (eg. not stunt doubles) will be probably some Jackie Chan movies

I recall watching a documentary of some sort on how they did light sabers in the movie, they were at first fighting with florescent light tubes, but IIRC later ended up with plastic sticks wrong.
