Heat (1995) great actors, great director, great epic crime story
Ronin (1998) one of the best filmed car chases in France
Infernal Affairs I (2002) thrilling Hong Kong police undercover movie, btw The Departed is a remake of this
Infernal Affairs II (2003) prequel, more drama, more deaths, more epic
Joint Security Area (2000) great korean war-drama-crime-thriller told almost only in flashbacks
JFK (1991) political conspiracy movie at its best
Street Kings (2008) just a good LA police story
Amélie (2001) cute story and soo many funny ideas and details

Also I like the Leone/Morricone western combo, they have very nice soundtracks!
Once Upon A Time In The West (1968) just the intro is epic enough
The Good The Bad And The Ugly (1966) not only a western, also an anti-war-movie

Do you like some action without too realistic story?
Commander Hamilton (1998) the brutal swedish James Bond
Men Of War (1994) Dolph Lungren in the djungle

And a lot of others: Butterfly Effect, Apocalypse Now, Platoon, Point Break, The Godfather, The Thing, Training Day, ...
